I need some inspiration!

I have no idea what to make for dinner tonight. Like, seriously no idea whatsoever. My mind is blank. I am uninspired and in need of a chef to call my own. Where's Jamie Oliver when you need him?

Any ideas to give me the (healthy) kick-start I need? Do send them my way, won't you please? I'd be forever grateful, and probably the boys around here would be, too.

  1. mmm... i'm always a fan of corn and black bean quesadillas. i open a can of each, and toss some cheese inside a couple of tortillas and add a bit of both... then fry them up on the stove with a bit of butter. quick, easy, and with a little salsa and sour cream on the side, completely delish!!

    (p.s. love the print!)

  2. CHICKEN PESTO?
Couldn't be easier...Fussili pasta or penne or any long style pasta shapes. A Jar of Pesto. 2 chicken whole breasts...just cook on a George Forman style grill or griddle pan ...when cook slice and add to the pasta that has been toast and coated in the Pesto sauce, serve with rocket/salad...whatever and some freshly grated cheese and black pepper. My two boys have always like this! In fact we had it tonight HEY PESTO!
    enJOY!

p.s. It's also lovely without the chicken too

  3. That's always tough. My go-to dinner when I don't want to think is roasted broccoli with pasta (throw some brocolli on a baking sheet with some olive oil and salt, cook until brown in spots and delicious, and toss with whole-wheat pasta and parmesan), or beans and tortillas. Boring, but delicious!

I think I might have to go eat broccoli and pasta right now!

  4. I always want roast vegetables with anything - fajitas, pitta bread or even made into a soup, yum

I hope you find some inspiration :)

(after reading abbies comment I definitely fancy brocolli as well lol)
